Oobleck is a shear-thickening non-Newtonian fluid. In a Newtonian fluid (water, oil), viscosity stays constant regardless of how fast you stir it. In a shear-thickening fluid, viscosity increases with the rate of applied stress. At slow rates, the cornstarch particles suspend freely; at high rates, they jam together into a solid lattice. The transition is instantaneous and reversible. This same principle is used in body armour, anti-mine vehicle floors, and flexible protective gear — engineered non-Newtonian fluids at industrial scale.
